The chefs at Nando's Peri-Peri have a very specific process for crafting their signature chicken. It starts with Peri-Peri, or African Bird's Eye Chili, which is both a spice and a natural preservative. The chefs mix it with garlic, salt, lemon, onion, oil, and vinegar, then marinate their chicken in it. The result is a fiery, complex flavor that distinguishes the chicken.
Come to the Nando's in Baltimore for a taste. You can order the chicken solo with sides like flame-grilled corn on the cob, Portuguese rice, or red skin mashed potatoes with garlic butter. Feel free to try it atop a bowl or stuffed inside of a sandwich, as well. The new ancient grains bowl starts with a bed of mixed greens and kale, which is tossed with bulgur wheat and quinoa, all coated with poppyseed vinaigrette. Then the chef adds the signature chicken, spicy cashews and almonds, red onion, feta, and dried tomatoes.
